Ingredients
- 1 head Romaine lettuce;
- 2 chicken breasts, skinless and boneless;
- 1 avocado, sliced;
- 2 eggs, boiled and sliced;
- ½ tbsp. chili powder;
- ½ tbsp. garlic powder;
- ½ tbsp. dried oregano;
- Sea salt and freshly ground black pepper;
Caesar Dressing Ingredients
- 1 cup homemade mayonnaise;
- 2 garlic cloves, minced;
- 2 tbsp. fresh lemon juice;
- 2 tsp. anchovy paste;
- 1 tsp. Dijon mustard;
- Sea salt and freshly ground black pepper;
Preparation
- Preheat the grill to medium-high heat.
- Rub the chicken with chili powder, garlic powder, oregano, and salt and pepper to taste.
- Grill the chicken 5 to 6 minutes per side, or until no longer pink.
- Transfer chicken to a cutting board and slice.
- In a medium bowl, whisk together all the ingredients for the Caesar dressing until well blended and season to taste.
- In a bowl toss the lettuce with the avocado.
- Divide salad mixture among individual bowls. Top with sliced chicken and eggs.
- Drizzle Caesar dressing on top and serve.
